    Start by cutting the dough ball into four or six manageable pieces. Keep any pieces you are not using in plastic wrap to prevent them from drying out. Flatten the first piece and run it two or three times in the widest position. Then fold it in half and pass it twice. Finally, fold it in thirds – like folding a letter – flatten it and pass it two more times.

    Finish by setting the machine to the next size, passing the dough twice before changing it again. Keep turning and kneading until the foil has reached the desired thickness. You may need to cut it in half at some point if it gets too long to handle.
